Everyone who knows me well knows that I am a cool weather girl. I love to frolic in the snow (when we go out of town to visit snow because, of course, it doesn’t snow at the shore in temperate SoCal as many times as I have wished it over the years). Well, the Weather Gods turned up the heat and humidity around here recently thanks to a hurricane from Mexico. oh, how I wish I had it this weekend when the inside of my house was 86 degrees at 10:00 PM and it was 99% humidity outside. Sticky, sticky, icky. Tonight we head to one of our favorite outdoor venues for a summer concert, and, as we do, we will picnic in the park prior to the show. If you picnic or tailgate more than a few times a year as we do, I recommend purchasing a small cooler or insulated cloth picnic basket (they have great collapsible coolers at REI for those who lack home storage space), a tiffin container and/or... Make sure that everything is well refrigerated before packing the cooler and layer the food between the ice blocks with one on the bottom and one near the top. Yes, you can use all disposable items if you must, but we prefer reusable items for two reasons: 1) environmentally friendlier in long run and 2) eliminates scavenging from the coyotes, raccoons, and other wildlife, which in a public park is a... I love a good picnic, but a lot of the typical foods that one would serve picnic-style are a bit too heavy in the heat and humidity: cheeses sweat and melt, anything yogurt or mayo based or dressed can spoil quickly, and high alcohol wines or... The key is to pack the picnic cooler with items that are light and delicious room temperature and can withstand sitting around for a bit. For tonight’s picnic I have filled the tiffin with a delicious Turkish / Middle Eastern inspired couscous salad, hummus, grilled flatbread, and some cut up veggies (zucchini, bell peppers, carrots, and tomatoes) – all of it homemade or homegrown. My couscous recipe is a delicious hot dish, but is truly fantastic chilled or room temperature. If you are vegan, you can very easily adapt this recipe by substituting precooked chickpeas (or some other processed, soy-based Frankenfood for the chicken – No offense, vegan friends: I am allergic to soy and try to avoid processed foods, so I... ) and vegetable broth or water for the chicken broth. The best thing about couscous is that it cooks in the time it takes to boil water, plus 5 minutes, so this goes together quickly. This is one of those intuitive recipes – use your eyes and your nose as you go. Chicken Couscous Salad (serves 2, but can easily multiply). 1 COOKED chicken breast, shredded (I had the hubs grill an extra one the night before when making dinner. couscous 1 1/2 c. chicken broth zest a lemon juice the lemon a few glugs of olive oil (just enough to lightly coat the bottom of the pot) 1/2 white or yellow onion, chopped 1 clove garlic, chopped 1 TBS. Turkish spice blend OR Za’atar (I get both from Penzey’s Spices. cinnamon 1/2 cup chopped dried fruit (I used unsulfured apricots and figs. ) optional garnishes once cooled: chopped parsley or mint and/or chopped almonds or pistachios The Method:. Chop and measure everything that needs it – advanced prep is key here due to speed of cooking. Heat the olive oil and lemon zest over medium heat until fragrant and shimmery. Toss in the onion and give it a few laps around the pan until softened and fragrant (maybe 3 minutes). Toss in the garlic and give it a few laps around the pan until fragrant (maybe 1 minute). Toss in the spices, chicken, and dried fruit and stir until, you guessed it, fragrant (maybe 1 minute). Pour in the lemon juice and broth and bring to a boil. Add couscous and stir to combine. Cover with the pot lid and TURN OFF THE HEAT.

So, just like we do every spring, we went out strawberry picking yesterday, and the kids helped me to put up some strawberry jam today, to spread the joy around a bit later in the year. They wanted to try something a little different this year, and when I suggested adding some vanilla to the batch, they jumped at the idea. We put up eight 8 oz. containers with the recipe here, with another container (the one pictured here) left over that we started digging into as soon as it was cool enough to eat.
