If you’re going to invest $10 million into upgrading a resort property, you’re going to put some of that money into a new, flagship resort restaurant. And that’s just what the Scottsdale Resort at McCormick Ranch has done with its new Kitchen West Restaurant. Formerly called the Scottsdale Resort and Conference Center, the iconic property on McCormick Parkway closed in July for a floor-to-ceiling revamp. The new owners, Destination Hotels & Resorts, sought to restore the once-grand property, which debuted in 1976. The resort reopened after Labor Day. the restaurants are scheduled to reopen on Oct 1. Kitchen West will not be in the resort’s AAA Four Diamond Palm Court restaurant space on the third floor. That area will be used only for breakfast, Sunday brunch buffets and on holiday occasions. Instead, Kitchen West occupies a former bar and lounge on the lobby level, with the new Bar Six40 set in another garden-front lobby area right next door. Under the direction of executive chef Rick Dupere, the Kitchen West concept is a modern interpretation of American Western cooking, served as single plates or family style at lunch and dinner. Some signatures include a Surf & Turf of black cod, truffled beet hash and cider emulsion. A demonstration kitchen will showcase wood grills and ovens. Bar Six40 also will operate as an extension of Kitchen West, offering local coffee, freshly squeezed juices, light breakfast options and afternoon snacks along with craft beers and wines on tap. The name comes from the number of acres that Army chaplain Winfield Scott purchased in 1888, and that would later become the city of Scottsdale.
