Thanks to Midwestern Living Magazine for this creative brunch recipe. A galette is a free-form pie. TOMATO GALETTE. 1/2 cup cold unsalted butter, cubed. 1 1/2 cups all-purpose flour. 1/3 cup shredded Parmesan cheese. 1 teaspoon cracked black pepper. 4 -6 tablespoons cold water. 4 large heirloom tomatoes, cored (about 2 pounds). 1 teaspoon kosher salt. 3 tablespoons fine dry bread crumbs. 1/2 cup thinly sliced shallot. 2 teaspoons fresh thyme leaves. 4 -6 ounces semisoft goat cheese (chevre) or feta, crumbled. 1 egg, lightly beaten. 1 tablespoon water. Fresh basil leaves. In a large bowl, cut butter into flour with a pastry blender until pieces are pea-size. Stir in Parmesan and cracked pepper. Sprinkle 1 tablespoon cold water over part of the mixture. Push moistened dough to the side of the bowl. Repeat, using 1 tablespoon of the water at a time, until all of the dough is moistened. Form dough into a disk. Wrap with plastic wrap. Chill at least 30 minutes or until easy to handle, up to 24 hours. Slice the tomatoes about 1/4-inch thick and arrange on a wire rack over a baking pan or paper towels. Sprinkle with salt. Let drain for 30 minutes. Preheat oven to 375 degrees. On a lightly floured surface, roll dough to a 13-inch circle. Transfer to a large baking sheet lined with parchment paper. Evenly spread breadcrumbs on pastry, leaving a 2-inch border. Layer tomatoes, shallot, thyme, and goat cheese on breadcrumbs. Fold crust over filling, pleating as necessary. Leave some filling exposed in center. Combine egg and 1 tablespoon water. Bake 30-40 minutes or until crust is browned and crisp. Cool at least 10 minutes. Serve warm or at room temperature, garnished with chopped fresh basil. On the other hand, my tomato plants love it. They’ve been lush and green this year, thanks not only to the sun, but also to generous doses of organic fertilizer and the black mucky stuff from my compost bin. Having lots of red worms living in the bin gives me plenty of free worm castings, too. What would we do without tomatoes. It’s hard to believe that for a long time people thought they were poisonous. And though we associate them primarily with Italian cooking, they actually are native to Central and South America. In fact, for many years, Italians grew tomatoes only for garden color, like flowers. It’s likely that when tomatoes were first brought back to Italy, they were yellow varieties. In any case, tomatoes have been cultivated into a huge variety of types — everything from ruffled to smooth to grape-shaped to pear types to cherry tomatoes. They come in every imaginable color, including purple, orange, yellow, red, green, pink, striped, brown, and nearly black. They have flavors similar to chocolate, pineapple, apricot, citrus, and — well, tomato. Most store-bought tomatoes are less flavorful because they’re grown for harvesting by machine. More than that, they’re picked while green and then gassed to turn red. I love my homegrown tomatoes. I did nearly all of them from seed this year, and thanks to seeds hidden in my compost bin, I also have volunteers from last year’s tomato varieties, along with squash and tomatillos. Cooking with tomatoes What can’t you do with tomatoes. I mean, they go with almost everything. And they can be turned into soups, sauces, side dishes, tarts, salsas, granitas, sandwiches, beverages, salads, and snacks. They can be stuffed, fried, baked, pureed, sliced, mashed, grilled, chopped, reduced, dried, and eaten whole. Pair them with burgers, pasta, greens, baguettes, beans, zucchini, anchovies, pizza dough, cheese, chicken, barbecue, and fish. People have dried their plum or San Marzano tomatoes in the sun and then run them through fine sieves to make paste. They’ve been caramelized as a sweet side dish. In fact, almost every culture around the globe now cooks with them. So, when you head to the farmers’ market – or to your garden – get beyond tomatoes in a boring lettuce salad.
