It's the first week of August, my friends, and I'm definitely not ready for fall. And so is back to school, carpooling, parent-teacher conferences, and homework tackled while someone cooks dinner after the kids have shed their body weight in backpacks at the door. With all that in mind, I wanted to give you an easy meal solution, something you can make ahead, stash in the refrigerator or freezer, then use on busy weeknights. So, pull out your Crock-Pot, slow cooker or Dutch oven for my shredded beef in its own juices. This recipe is flexible in terms of cooking time, make ahead-ability and serving options. Use the tender, fall-apart beef as is. with soft rolls you dip in beef juices. or over buttered noodles or cooked jasmine rice. Make the recipe even more your own by shopping your pantry for ingredients to stir into the beef: barbecue sauce, teriyaki sauce, marinara, Alfredo sauce or fresh pesto (try arugula pesto). You even can swap out the beef for pork roast, turkey breast or chicken. Another great thing about this recipes (besides eating it. ) is that your dinner cooks itself while you do other things like checking homework, signing permission slips, doing laundry or running errands. You can do a lot in the five hours it takes to cook the beef on high in your slow cooker and even more (like complete a work day) in the eight hours it takes on low. Have at this shredded beef and let me know how it turns out at your house. DISH IT UP SLOW COOKER SHREDDED BEEF. 1 (3- to-4-pound) boneless beef chuck roast. 4 cloves garlic, smashed, peeled and minced. 1 cup dry white wine, apple cider vinegar mixed with dark ale, or verjus (verjus is juice pressed from unripened red or white wine grapes. Place beef on a cutting board, pat dry on both sides with paper towels and vigorously rub the salt and pepper into both sides of the meat. Place beef in the bowl of a slow cooker. Scatter onion and garlic over surface of the meat and pour the cooking liquid into the bowl. Cook on high about 5 hours or on low about 8 hours. Turn off the slow cooker and transfer beef to a platter. Use 2 forks to shred the meat, removing any largish pieces of fat. Defat the cooking liquid using a fat separator or cool to room temperature and skim fat with a large spoon, discarding fat. Add the cooking liquid to the shredded beef to keep beef moist and flavorful. Use beef immediately as is or spread out on a sheet pan to quickly cool to room temperature. Store in the refrigerator up to 5 days or in the freezer up to 4 months. If you don't have a slow cooker, you can use a Dutch oven or your heaviest pot with a tight lid to braise the beef in your oven at 325 F for 2 1/2 to 3 1/2 hours.

Due to a clerical error, I didn't go to the club to work out this morning. Instead, I pulled the pork that had been in the crock pot overnight. YUM-O! It's now in the fridge, biding it's time until dinner. That will give the juice time to separate so that I can recover the fat and spread it on my toast. Just kidding! (Although that does sound great...) I'll add some juice back into the meat when we re-heat it, which will make it nearly good as new. Here's the recipe. Recipe: Slow Roasted Pulled Pork Makes 8 to 10 servings Prep: 5 minutes Cook: 5 minutes Bake: 4 hours 1 (5 lb) pork butt, trimmed and tied 3 tablespoons Q Shack Dry Rub (recipe below) 1 tablespoon olive oil 1 cup apple cider 1/2 cup water 6 fresh rosemary sprigs 5 jalapeno peppers, cut in half lengthwise Barbecue sauce (optional) 1. Preheat oven to 325. Rub pork with Q Shack Dry Rub. 2. Heat oil in a large Dutch oven over medium high heat. Sear pork about 2 minutes on each side or until well browned....

Ingredients 1 teaspoon salt 1 teaspoon garlic powder 1 teaspoon ground cumin 1/2 teaspoon crumbled dried oregano 1/2 teaspoon ground coriander 1/4 teaspoon ground cinnamon 1 (4 pound) boneless pork shoulder roast 2 bay leaves 1/2 cup chicken broth 1/2 cup orange juice juice of one lime Directions 1. Mix together salt, garlic powder, cumin, oregano, coriander, and cinnamon in a bowl. Coat pork with the spice mixture. Place the bay leaves in the bottom of a slow cooker and place the pork on top. Pour the chicken broth around the sides of the pork, being careful not to rinse off the spice mixture. 2. Cover and cook on Low until the pork shreds easily with a fork, about 10 hours. Turn the meat after it has cooked for 5 hours. When the pork is tender, remove from slow cooker, and shred with two forks. Use cooking liquid as needed to moisten the meat.
